A Healthy Breakfast Drink from my kitchen



Normally, I don't like pumpkins, especially the ripe ones. So, if they are used in sambhar or avial or made as erissery, I am fussy! But that's not the case with the raw ones.... I love raw pumpkins and papaya...Raw pumpkins are good for salads (especially their skin) and juices; and raw papayas make a good thoran. It was my papa who introduced me to these juices made out of raw pumpkins and they tasted yummy.....He used whatever fruits and veggies that were available in his garden for the juices....The main ingredients, however were pumpkins, carrots and apples, with a few additions or subtractions in the ingredients. I always prefer to stick with pumpkins, carrots and apples without any sugar and we, including my little fussy-eaters love it.


Ingredients:

Raw Pumpkin - 1/2, peeled and cubed
Apple - 2, cored and chopped
Carrot - 1, peeled and chopped

Method:
  • Place the chopped pumpkin, apple and carrot in a food processor or blender and process.
  • Pour into a glass and add ice cubes and serve.

Pansache Dhonas/ Jackfruit Cake

It's the season of jackfruit and you get to see lots of them in Kerala now. Last week, when I went home for a day, I brought back some jackfruits as my son loves them...... After everybody had their share, I had little left in the fridge and so decided to bake this Goan cake - Pansache Dhonas, which I had penned down from Raksha's Kitchen some months back. Keep aside. Let it cool for at least 20 mins. Remove the jackfruit seeds and put them into a mixer and make a pulp out of it.

Rose Meringue Cookies for Pink October

Mochaccino Brownies

I love anything that has coffee. Be it cakes, brownies, desserts anything under the sun that has coffee, I simply devour it! And, it's been quite some time since I've made anything with coffee... Found this brownie recipe in one of the books I have and sounded quite interesting!!!  A Mochaccino Brownie, heard about it?? Me, no way!!Haven't come across any mochaccino brownies in my place!!
