Red Velvet Cake with Cream Cheese Frosting

Hope everybody had a fabulous Valentines Day!! I celebrated mine with this wonderful Red Velvet Cake..... I couldn't think about any other cake on that day other than this special cake. Well, I have seen the pictures of the red velvet cake on a few blogs, but was quite skeptical to bake it as I was not sure as to how it tastes!! That's when I happened to stumble upon it a few months back in one of the restaurants in my locality..... I immediately ordered and we-me and hubby loved it instantly.....Since then I have been waiting for Feb 14...... Meanwhile, I searched for a good recipe for the cake and found many, but I was quite impressed with the one on Cook's Joy ...... Red Velvet Cake Ingredients: Recipe Adapted from: Cooks Joy All purpose flour - 2 1/2 cups Sugar - 1 1/2 cups Salt - 1 tsp Unsweetened cocoa powder - 2 tbsps Red food coloring - 1-2 oz Unsalted butter - 1/2 cup @ room temp Eggs - 2 @ room temp Vanilla essence - 1 tsp * Buttermilk

Chocolate Chip Blondies

Chocolate chip blondies, a perfect tea time snack with hot tea/coffee/milk..... The kids had it with their milk and they equally loved it. You could bake it in a square tin and then cut them into bars or baked in muffin cups like I have done! Ingredients: Recipe Source: myrecipes.com All purpose flour - 1 cup Baking powder - 1 tsp Salt - 1/4 tsp Unsalted butter - 8 tbsp Brown sugar - 1 cup, packed Egg, large - 1 Vanilla essence - 1 tsp Milk chocolate chips - 1 cup Chopped walnuts - 3/4 cup (optional) Method: Preheat oven to 375 F/190 C. Grease a 12 cup muffin tin with butter or line with paper muffin cups. In a small bowl, mix flour, baking powder and salt. Stir with a fork to combine. Melt butter in microwave and stir in the brown sugar. Let cool slightly. Then stir in egg and vanilla essence until smooth. Stir in flour mixture, chocolate chips and nuts. Portion out a little less than 1/4 cup batter into each muffin cup and smooth tops with a spa
