Apple & Cinnamon Muffins

Well, there is nothing much to say about this bake...I found it in one of my baking books and the pictures were quite appealing...Moreover, I had some apples at home and so zeroed in this recipe....




Ingredients:

For the muffins
All-purpose whole-wheat flour - 2/3 cup
All-purpose white flour - 1/2 cup
Baking powder - 1 1/2 tsp
Salt - 1/4 tsp
Cinnamon, ground - 1 tsp
Superfine sugar - 1/4 cup
Apples - 2 medium or 1 large; peeled, cored and finely chopped
Milk - 1/2 cup
Egg, beaten - 1
Butter, melted - 4 tbsps

For the topping
Brown sugar lumps - 12, coarsely crushed
Cinnamon, ground - 1/2 tsp


Method:
  • Place muffin paper liners in a muffin pan.
  • Sift both flours, baking powder, salt and cinnamon together into a large bowl and stir in the sugar and chopped apples. 
  • Place the milk, egg and butter in a separate bowl and mix.
  • Add the wet ingredients to the dry ingredients and gently stir until just combined.
  • Divide the batter evenly among the paper liners. To make the topping, mix the crushed sugar lumps and cinnamon together and sprinkle over the muffins. 
  • Bake in a preheated oven at 200 C for 20-25 minutes, or until risen and golden.
  • Remove the muffins from the oven and serve warm or place them on a wire rack and let cool.

Caramel Cake

This time, I am deeply smitten with the vacation bug, and I still haven't recovered from it yet. A trip to The Capital was the main highlight of this year's vacation and we especially my kids thoroughly enjoyed it. Shortbread Cookies

I always wanted to bake cookies, but never had the cookie cutters for cutting out the cookies in shape. Finally, last week when shopping at Niligiris, I came across a small box of 6 cookie cutters......no second thoughts; in goes the box into my trolley...*smiles*......
